Wine maker notes
To be enjoyed with the eyes and nose even before the mouth. A refined pink colour heralds scents of the undergrowth and fruit compotes. The Yin and the Yang of life represented by Chardonnay and Pinot Nero left to rest on yeasts for more than 24 months. Sensual, very enjoyable and eclectic. A perfect wine in any situation and with any food. To be tried absolutely with fine salamis and cold cuts and with raw shellfish.

TYPE OF SOIL Partly of morainic origin, loose, drained and with an abundant skeletal texture. TYPE OF GRAPES 60% Chardonnay 40% Pinot nero from different vineyards. YIELD PER HECTARE 100 quintals grapes/hectare is the maximum yield allowed YEAR This is a Franciacorta “sans annee”, which does not bear the year of harvest because it is obtained from the skilful combination (assemblage) of the best wines of different years; the addition of pinot nero, with a slight maceration on the skins, gives it a good structure and elegant body. HARVEST Between the end of August and early September when the grapes have reached the correct sugar ripeness, but still have considerable acidity and freshness. AGEING To be disciplined, a minimum of 30 months after the harvest, of which 24 on yeasts. After disgorgement, the bottles rest in the cellars for another 3-4 months

Food pairing
SERVE WITH Recommended throughout the meal, especially with pasta and flavoursome meats, ideal with cheese and desserts. SERVING TEMPERATURE 8° - 10° C

ON THE DEATH OF LUIGI ROSSETTI, THE PROPERTY PASSED FROM HAND TO HAND, EXPERIENCING EVEN ABANDONMENT. THIS ENDED IN 1979 WITH THE BIRTH OF ANTICA FRATTA, A PROJECT THAT WOULD RESTORE ITS ANCIENT SPLENDOUR. TODAY, ANTICA FRATTA “RE-LAUNCHES,” WITH RENEWED AND GREATER AMBITIONS, AND WITH THE FIRM INTENTION OF BECOMING THE “ESSENCE” OF FRANCIACORTA.
