The Cabochon is the most prestigious Franciacorta wine among Monte Rossa production. It has been created in 1985 researching the most accurate selection of cru from the Hill of Monte Rossa and a new vinification system introducing the ”barriques” for the first fermentation of the must. The great satisfaction was that the obtained wine imposed itself among the most important labels of the Company. Cabochon Brut is made up of 70% of Chardonnay and 30% of Black Pinot grapes. The refining in contact with ferments lasts for than 40 months. This is a very harmonious, elegant and persistent wine having a well defined and rich personality making it an unmistakable wine .
|The Monte Rossa is an historical wine producing company in which the country tradition blended harmoniously with technology and in which the artisan care and the very passionate research for excellence have been managed with great diligence and entrepreneurial behaviour , without compromises.In 1972, the entrepreneur Paolo Rabotti with the precious help of his wife Paola, took up the way of vine growing.
This has been a very positive and forward-looking choice that still today is carried on with great enthusiasm and innovative attitude by their son Emanuele.The Monte Rossa story is filled with strategically winning decisions, for example the decision of leaving as first Company the production of no-sparkling wines in favour of the research of the Franciacorta excellence or the decision to invest in technology with great determination, and furtherly the continuous research, tests and trials for which our Company is distinguished among the others. Today the Monte Rossa Company manages 70 hectars of vineyards. The different locations of cru on plots with different exposition contribute to increase the aromatic richness of grapes in such a way to make up very rich cuvee under the frame and complexity aspect. The Company production is 500.000 bottles approx. per year.
