Located in the Illasi Valley of the Valpolicella region, Cesari’s Bosan vineyard is a densely planted vineyard featuring alluvial, tuffaceous soil with a clayey consistency. Cesari Bosan Ripasso Valpolicella Superiore is a limited production, single-vineyard wine that is fermented in stainless steel and then refermented on the grapes’ dried skins (“the Ripasso technique”). The wine then undergoes malolactic fermentation, followed by aging in French oak casks for 12 months, oak barrels for 6 months, and bottle for 8 months. Full-bodied with a velvety finish, this wine has a complex bouquet of red fruits and spicy cherries. Enjoy this wine with grilled meats, game, stews, and fully-flavored risottos.
