Wine maker notes

Vineyards:
Location: different vineyards in the Collio area Altitude: 45 to 100 m. above sea level Exposure: North, north-west and south Soil: The clayey soil of the Collio DOC area results from the disintegration of the stratified marl and sandstone in the subsoil. It is rather marly in the higher areas and has a finer composition at the foothills Microclimate: Mild temperatures with rainy springs and warm, dry summers Vine planting system: Double Guyot Vine planting density: 4000 vines per hectare Age of the vineyards: 10 to 22 years

Vinification and Ageing:
Manual harvest in 18-kilos cases. After a brief cold maceration the grapes are soft-pressed and cold filtered. Alcohol fermentation without skin contact, in stainless steel tanks at a controlled temperature, for approx. 10 days. The wine rests on the lees though the winter, then is bottled the following spring.
